Authentic Japanese noodle restaurant run by Youko Yamamoto and Kazuma Oshita who believe that "E-Shoku-Doh-Gen: Food is the Best Medicine."  They have developed many dishes that contain real flavor called "Umami", which is derived from their original "Kaeshi" mother sauce fermented for six months in-house.  In order to prepare the best dishes they work very hard to source ingredients that are GMO-free, MSG-free, radiation free and locally-produced and organic. Your choice of vegan and gluten free options are plentiful. Original desserts and a great line of sake and wines are waiting for you.
