Farms, farmer’s markets and stands are an integral part of Ulster County’s landscape. Early settlers realized that the rich soils of the valley were unique to the region, in spite of a relatively short growing season. Dairy farmers thrived, apple orchards and corn became major cash crops, and that history continues today with dozens of thriving agricultural enterprises. The farmer’s markets, particularly, have enjoyed a resurgence with organic and mini farms supplying fresh produce to locals and visitors alike. The markets are a magnet for cooks looking for fresh cheese, mushrooms, root vegetables, chickens and fruits and breads of all kinds. So, when you find yourself travelling behind a slow moving tractor pulling a load of hay just remember that Ulster County is at work…feeding the region.
